Literally Gons power up would have been played as magical in nearly any other shonen. Instead Togashi does something much more logical. It would make no sense for Gon to get that powerful. While understand you, I cannot sympathize. I taught myself how to animate by studying sakuga. It's what I want to do with my life. I will always place animation quality over story. Because I know what it takes to produce those fights. It's not easy.
I also have a power fantasy because my life sucks, so I enjoy things that allow me to see just what it would be like to have immense power. Anime has so much of that.

For me it's about the quality of motion rather than the quality of the drawing. The well done fights(in my opinion) all convey power, weight, and speed extremely well. It's all in the fundamentals. Take this clip for example. The main one at play here is anticipation. Look at how long he's taking to prepare his attack, the force it's creating in the effects.
I get what you mean by derpy. Take the infamous Pain stretch frames. To the layperson, it looked like a moronic artistic decision. But for people like me, such frames indicate a level of force that allows me to believe the destruction the blow causes.

I started with Flash. (these were done in EZtoon. think the nintendo 3DS flipbook but a few more features and no color) Now I would recommend clip studio EX. But I'm a huge CSP shill so I can't be trusted. There are plenty of free options to learn with. Krita is one of them.
start with the basics. Learn these fundamentals and study what you think looks good.

But that's main problem with that anime. MC is ronin who knows how to fight, but because he's immortal he is constantly maimed for gore points but still wins because he's immortal. When he lose immortality he defaults to unbeatable protag.
