Predators usually only do that if they consider the kill a worthy foe.
How can the other predators tell whether or not the kill was worthy though? I mean, a xenomorph for example is always dangerous so their skulls are prestigeous, but human skulls at that point in time prior to advanced weaponry should be all but worthless in Predator society. Same with any other mammal that even human cavemen could hunt and kill.
This predator is a bit of a dumb asshole and also really dishonorable, they actually establish his characterization early on when he decides to go head to head with a bear and gets fucking mauled and nearly dies, also in the way he prepares some of his earlier trophies, you get the sense that he's impatient and inexperienced and going out of his way to prove himself, kind of like our protagonist.

I was thinking the same thing. The Predator literally goes through the same character beats as the protagonist, even making mistakes from its overconfidence.

The whole honor shit is just something the people perpetuated over time with the amount of comics and video games coming from the films. For some reason, what was meant to be hunter values in the original got warped into some bushido samurai code bullshit. The new movie actually hues closer to that original idea with the Predator hunting down prey as it sees fit.
The whole honor code was established very early on in the books and movies with predators ignoring noncombatants and sparing pregnant women.
