Part of the problem even a midquel series - characters like Anakin, Obi-Wan, and Padme go through some pretty rough stuff to the point you'd think they'd change considerably but they have to stay the same because they didn't develop that much from AOTC to ROTS.
Asajj's development works a million times better than Ahsoka's partly because she's so removed from the mainline movie plots they had more freedom to actually develop her and you can see her change on screen.

Star Wars died when they declared the Expanded Universe non-canon because JJ Abrams and Kathleen Kennedy thought they were more talented than all the writers that came before them combined. Clone Wars was fine for what it was. The Force Awakens was rehashed garbage that set everything back and now they're scrambling to reincorporate the expanded universe.
