Plus that there's 50 billion different Superman variations, and at least a few of Goku, so you couldn't really definitively say one has "higher stats" unequivocally. Goku is smart enough at karate, but Superman does have martial arts training and better tactical training overall in not just "hit thing really hard". Rather than trying to satisfy Goku's need for prolonged choreography, could probably just heat-vision Goku's connection to ki energy out of his brain if he really wanted to be mean about it (see Manchester Black).
That's still far more than what Superman has normally. And yes, I can say Goku has better stats because we're obviously talking about their mainline versions, not Prime million vs Xenoku.
Goku isn't just "smart at karate", he's a genius warrior that makes plans at ridiculous speeds. And your Manchester example wouldn't even work, not only because Goku out speeds Superman, but also because ki is tied to one's essence, it's not rooted in the brain like Black's powers were.
Shared between them is strength, speed, flight, some level of superhuman senses, intense durability, shooting energy crap out. Goku teleports and becomes intangible, Superman can move fast enough to basically do that and travel through time sometimes. He's also done the Super Saiyan and Ultra Instinct stuff basically. Superman has X-ray vision, freeze breath, has a bunch of martial arts training of his own, meditation to resist mind hax and fight on the astral plane, and arguably has meta protection that Goku does not have. The problem with saying "mainline" Superman is that even there, are you talking pre-Crisis, post-Crisis, New 52, Rebirth/Convergence? It's inconsistent what it is and what powers he does have, and he has experience dealing with a wider variety of foes who can be even more brutal and also arguably have better training (General Zod or Darkseid, for example), just due to sheer volume of comics.
Goku is smart at martial arts, but if you have a shit ton of powers between you, Superman has smarter ways to use them than just repeatedly punching and kicking a guy. I also would assume that "no brain = no ki", and if you severed the memories of using/developing those techniques, like if you severed how to walk, eat, etc. despite them technically being able to still physically do it, that would still fuck something up. Plus Goku's ki has not always saved him and he's been caught off guard (bullet, rock, laser gun, heart virus, etc.).
Obviously talking Rebirth Supes. That's the main version from the core continuity. And the problem is that the gap is far too large. Superman can't even begin to understand what Goku's moves do before he's pulverized.

Shadowheart gets a once-per game divine intervention super attack/Mass rez effect, Karlackh has the coins & firebody, Astarian his vampire feeding buff, Gale his free spellslot recoveries.
The suite of disposable items are what really borders on breaking out into unfairness enough to blow past the level gap. between Potions of Speed, Revivify, and Arcane restoration, Weapon coatings and a backlog of spellscrolls that everyone forgets to use. sometimes the party gets to bring along meatshield pets like Scratch & Us & Dance Macabre ghouls.
