Once they're gone, and unless the US actively intervenes with boots on the ground, Russia could easily steamroll the rest of Europe. That's why countries like Poland and Germany are panicking and remilitarizing like crazy.

They can't. At this point even Finland could easily repel a full scale Russian invasion. Russia will fall apart from within soon enough though so might not be time for any invasion of the Baltic states.
