they likely weren't fully aware of how big they were going to blow up and just kept things small and cameo-ey. now that they've hit mainstream success they're probably more able to pay for more guest spots.

In the first season they were given a hard cap on the number of voice actors they could have (which, true fact, is literally the only Chris-chan didn't get to voice the puddle in the murder mystery episode).
Seemingly, things have changed with the second season.
They didnt do it much in season 1 because to guest star in a syndicated cartoon you have to be a member of SAG-AFTRA or a voice actor union which is honestly too much work for most people to consider. So yeah you can blame union mob bosses.
One of the main schticks of the show even back in s1 was the mix of animation styles. Getting online animators to animate characters in their own style is just an extension of this.

You really don't need to be that intelligent to know that people with millions of fans collaborating together makes more fans and everyone more money and freedom to make what they like to make and benefits everyone involved.
A lot of people cite Zach and Michael wanting to give their Newgrounds friends work. What a lot of people probably don't know is that the main executive producer of Smiling Friends (Cody DeMatteis) was also one of the guys behind Off the Air, which is an anthology show that's nothing but animations from YouTube. Since that show recently got cancelled, he's likely using SF as a way of keeping the spirit of OTA alive
They're spreading the love and it's hit or miss. But they know how difficult it is to try to make cartoons when you're fricking 15 years old and only like 5 people care. It seems like a tight knit community
