You only need to watch EoE. You don't need to watch the series. The series is good, fine, but it is full of anime tropes, and if those turn you off then the series is going to turn you off. EoE makes perfect sense on its own, or, rather, the series isn't going to help it make much more sense. EoE is the only must-watch piece of Eva media. It's a spectacle. If you like EoE, then you'll probably want to finish up the series anyway.
