Why is it set only a few hundred years ago? The beloved old republic era is set thousands of years ago. Far enough away from interfering with the movie characters and plots. Even Darth Bane's era who is the closest to the movies is set 130 years before Yoda is born.
At this point I feel it's done specifically because they're chained to certain expectations and aren't expected to be creative.
As you say, the Old Republic's greatest strength was being far enough removed that none of the truly wild events would reasonably impact the OT/PT era, meaning you got force powered weapon factories, a dark side plague that turned anyone weak in the force into zombie terminators, actual zombie plagues, devices that turned the asteroid space worms into a WMD etc.
