You couldn't even lower taxes for your lands or avoid raising them while you raised other house's because they would just refuse to pay and challenge you to war. Sitting on the Iron Throne simply meant that instead of having to worry about running your lands, you had to worry about everything happening in a disjointed loosely affiliated kingdom full of various powers that only acknowledged your title because they were too stupid to realise they were in an antiquated and worthless system that has only functioned before under the threat of dragons which no longer exist.
In actuality within 10 years of the last Targaryen dying, most of the houses would've declared independence and splintered off into their own kingdoms. Sansa not telling Jon about The Vale coming to support their cause for the battle against Ramsy is one of the stupidest writing decisions to ever happen to any show and they outdo themselves 10x over when they have Dany show up beyond the wall half a country away.
