I think this is more down to people not being able to make a send off film without the character dying. Indiana Jones 3 had a good ending but since Indy was still alive they made another one, and another one. I mean Patrick Stewart basically confirmed this when he was asked what the point of Star Trek: Picard was answered saying "well he's still alive".
Last Crusade would've been the perfect stopping point.

Die Hard 5 was pretty shit and John McClane survived it. That being said you're right for most movies, killing off beloved characters and replacing them with shit is a pretty terrible formula that way, way to many studios seem to love using.
