They wanted to do witcher "for a modern audience," so he ended up leaving. His complaint turned out to be true since the story has been going and will go further off the books.
Anyone who doesn't believe what you're saying needs to remember that Cavill was doing netflix a huge favor by being in the show. The only reason they could get Cavill was because he's a fan of the source material and wanted to be in it. Without him the show is worthless (Honestly even with him it's not great). The show runners wanting to take it in a different direction at the expense of his involvement speaks more to their hubris and diva like behaviour than it does to Cavill's.

Even knowing some of the good stories that could be realistically produced, I just don't see the screen adaptations being very good, or even what fans would want. But I'm not sure fans even know what they want anyway, lots probably just say 6 hours straight of Astartes but that would be awful.
Big scale stuff would be too much to take on without absurd resources but something smaller scale would be relatively viable. Even marines if they did something like the space wolf guy book where they start with him being selected after a battle, spend almost the entire movie on the training/initiation part, and then finish it off with actual marine stuff.
