I don't think that the original show has enough of a cultural presence to warrant a sequel
It's bit with nerds who watched it back then, but not much potential audience beyond that

China is huge and diverse, despite all of the efforts of the Han Chinese to wipe out all other cultures within it, there's more mystical bullshit there than you can imagine.

Jackie Chan will be forever relevant because of his body of work. Pretty much every single one of his movies, until he started getting old and making shit like Shanghai Noon and The Medallion, is fantastic.

I am certainly not suggesting he's forgotten. But as a brand, especially with the target audience of kids? I don't think you can get dividends putting him in the title. Arnold is such a large part of pop culture's history I don't need to say his last name. But they didn't call the cartoon he featured in 2 years ago "Arnold Schwarzenegger's Superkindergarten Cop". Also Jackie Chan movies are way harder to run across now that they were when rental stores dollar theaters existed. Even the replacements - streaming and redbox don't fill the gap. Kung-Fu focused streaming service Hi-Yah only has 8 and they're all recent. Anyone interested in marital arts movies has endless options for other movies. Rumble in the Bronx isn't playing on Fox at 1:30 in the afternoon anymore. The mall ninja crowd has been consumed by anime. Jackie Chan Adventures is not getting replayed on TV now for that to even be a factor. Few of Jackie's movies have had HD remasters issued for basic cable play, and most of those were his Hollywood ones that are much less stunt focused and less loved. Honestly I don't know where I'd expect young Jackie Chan fans are going to naturally come from.

"As a parent I'll show my favorite stuff to my kids so they must love it" doesn't have the greatest track record of carrying blockbuster pop culture relevance. There's not a swelling of 70s kids that passionately share their parents love of Errol Flynn movies. There wasn't a massive uptick in John Wayne fans in the 90s. I don't see Jackie Chan bucking this trend. Kung Fu movies aren't getting the play in general, so much like westerns and swashbuckling movies: the space for the appreciation of its biggest star has shrunken.

If I remember correctly, it's a running joke that he's not actually anyone's 'uncle' despite everyone calling him such. It's even implied in one episode that he's not actually related to Jackie and Jade.
Also Jade calls Jackie 'uncle' despite them being first cousin once removed because uncle just sounds more endearing and better reflects their on-screen relationship.

If you make it just a ten year timeskip, then Jackie would still be totally viable to go on adventures. Tohru as well probably. Uncle might be pushing it though.

Jackie Chan, in Jackie Chan Adventures isn't a movie star, or a stuntman. He's an archeologist that legitimately loves the bookwork. If he's not being recruited to deal with ancient chinese demons week to week he has the opportunity to get doughy.. much like he was in his 50s. Jackie doesn't need to be inable, just reduced capacity and just enough to make his signature stuntwork style of one part acrobatics, one part propwork, one part choreographing martial arts, three parts wincing in pain after of it landing. The man has always been Kung-fu-Mr-Magoo.
