I didn't even like the character and think the show's overrated as frick and I think that's wrong. She's well-written. Her lines are well-delivered. And she hardly stepped on anyone's toes because she was poorly integrated into the plot as a whole.
She was just fricking annoying. That's not a show ruiner though.

I watched the show all the way through last year, and I don't remember Mabel getting her way over Dipper, or Dipper being forced to give up what he wants to do to stay with her. I see lots of people complaining that Dipper wanted to stay with Ford but had to choose Mabel against his will, but I forgive that considering they're both kids and their parents would obviously not be happy with Dipper just dropping out of school and never coming back home so he could go globetrotting with his weird great uncle who nobody has seen in decades.
Then you're either lying or have a sieve memory. The plot of every other episode eventually becomes Dipper having to give up something he wants, or general happiness, because Mabel is a needy, spoiled, self-centered brat.
The earliest time is when they get Waddles, when Dipper is faced with the entirely writer-forced bullshit of "the one timeline where you look cool and get closer to Wendy rather then having her pissed at you and getting back with Zack, is ALSO the timeline where Mabel doesn't get the random pig she just met and is sperging out about".
This kind of shit is really common in the series. And it never goes the other way. Not once does Mabel ever give in and give up something for Dippers sake. She's always ruining shot for him, like, for e ample, the secret carpet room, or the flashlight episodes. And to make matters worse she's SUPER hypocritical about it to when the shoes on the other foot, like the Mermando episode.
On top of THAT, she's ludicrously codependent, and can never let him have any friends or growth or development to call his own. The case with Ford is just the most obvious, extreme example. This, see hypocritical above, despite having her own clic of sane age girlfriends where she constantly tells Dipper to frick off because 'girl time'.
Mabel was also wanked over Dipper i getting more special moments with the cast. I think Alex said he obviously prefered her over Dipper in an interview.
Those are the kind of reasons that tells me that those two will stay together one day.

Mabel worked as a a catalyst for the stuff that happened in the show. Several of the episodes' plots came about because Mabel wanted a boyfriend and then it turned out the object of her affection was gnomes or a mermaid or even a pig. Gravity Falls simply would not have worked without Mabel and Mabel-hating doomers should try being less of a stick in the mud

I know why we have so much Mabelfied Dipper, but:
1) Why do we have so little of Dipper disguised as Mabel WITHOUT mind control? It doesn't even need to be consensual, it can still be coerced, blackmailed, or just plain manipulated, as long as it isn't the result of fricking hypnosis.
2) Why are Dipper's Mabel disguises so frequently so entirely unconvincing? Dipper is in the age range where he hasn't gone through enough of puberty to prevent him from passing as a girl; that's the point. It's fine if some boy mannerisms slip through because Dipper doesn't want to be doing this or he's a huge sperg or he's mocking Mabel, but if he's just a generic homosexual in bad drag, what's the point?
3) Where's all of the Mabel disguised as Dipper? Where's all the Dipperfied Mabel?
Dipper cannot disguise himself as Mabel anymore because he grew too much for it, maturally speaking, while Mabel remains didn't change as much as Dipper did.
