Disney doubled down on it with a press release saying this is still MCU Peter. My guess for now that this has something to do with the universe altering spell Dr. Strange did in No Way Home

There's no reason to overthink it, especially since that's what Disney wants you to do. Basically consider it another Netflix or Agents of Shield (I think the latter was even confirmed to be "somewhere in multiverse?): all come from original Avengers and might acknowledge previous/later material later, but doesn't really follow the main continuity.
