The Jaya part is a critical turning point of the story (introduce Bellamy, Dofly, BlackBeard and his buddies, Whitebeard and the four emperors as a concept).
But yes, for the moment plotwise the actuall Skypeia part of the arc is a isolated storyline with little consequences for the general plot.
Enel already is all but confirmed to be coming back as one of the endgame bosses in the manga... so not really

Jaya is the leadin arc and that introduces Blackbeard and the World Government looking for a Crocodile replacement
Its the most and least important arc in One Piece. It introduced important characters and orobably the most important plot element and how Gold Roger was chasing after those stone tablets that hold knowledge to the forgotten history of the world that the World Government is trying to hide.
I doubt they'll skip anything major. I wouldn't be surprised if season 2 is all about Chopper only reaches the beginning of Arabasta.

The Netflix adaption is the reason why I ever got into one piece, i knew about the anime and the comics for years but never really looked into it, anime just isn't for me, i understood who these characters are because of the Netflix show.

As fun as Skypiea was, it was one of the first arcs I noticed dragging a little bit, I think it's one of the arcs that could use some trimming, but anyone saying to cut it, especially saying "muh filler" are mega autists not to be taken seriously
I'm still slogging through dressrosa in the cartoon. Holy fucking shit its ass. I'm not spoilering this - if anyone is up to late dressrosa just fastforward every scene where people are running from the birdcage and the 10 episodes or so where every second scene is bellamy is just bouncing around. Spirit bombs go off quicker than this shit.
The dressrosa arc is one the worst offenders when it comes to the anime taking a fat shit on the manga
Dressrosa is absolute kino in the manga and blows any other post timeskip arc that came before it out of the water but to be fair there isn't much competition
The pacing of the Dressrosa anime is the worst. Over 100 episodes long and the entire arc takes place over a day. I’m pretty sure there was one episode that was 90% of Burgess doing his signature laugh.

Enel's so singularly autistic and out for himself that It would actually be a betrayal of the source to try and make it a "message". So far the show's kept things a lot less pozzy than most other adaptations, it could change though. I can't blame anyone from assuming the worst.

Going from the decent Alabasta arc to that lame shit was disgusting.
I finished marineford recently and stalled a bit on fishman. Should I keep going? I don't really like the character changes but if some of the newer arcs are good I'll keep on slogging
Fishman is genuinely a slog to get through. But there are some decent arcs ahead.
If you're watching the anime, make sure that you're watching One Pace or the otherwise "recut" versions available online. Don't watch the normal anime, you will be put to sleep.
Fishmen Isle is a well know slog. But the general pacing of the saga really became a slog with overly long and convoluted arcs with too many characters. Continue only if you are reading the manga because the anime (unless you Watch the One Pace fan project) its a miserable experience

Skypea is one of the most piratey arcs in one piece! The lost city of gold/Aztec/skull island setting, violent and aggressive local tribesmen, for a change they are actually looking for treasure too and the arc begins with a character called “Blackbeard”.
