The media uses this need in the masses in order to manipulate them, which is why they ram certain truisms and ideologies down your throat every which way 24/7. This has been a trick for forever. Consider the laugh track back when people watched TV, however we're past laugh tracks and now they're pushing destruction.

A lot of the responses here I believe are on target, but there's something even more primal about it. It's like asking "why are people more likely to click a thumbnail with an exaggerated reaction face". There's some monkey-brain thing that makes a lot of people like watching other people smile and laugh at stuff, it's like a sympathetic response thing.
Personally I have never watched any of these reaction videos (and prefer quiet, mostly empty theaters), but I'm a dorky nerd so what do I know.
It's for lonely people who want to see how someone else reacted to their media. Yeah, the videos are low-effort but it reels in a lot of views.

From my mind it started with Game of Thones red wedding episode. The show was massive and people who wouldn't normal watch such a show about medieval fantasy were getting drawn into it. That episode caused such a shock to the viewer that people wanted to record their friends and families reactions to it.
I don't know if the show actually engineered the reaction craze or if it happened organically but that was when I first become aware of these videos. Then came Sherlock jumping off the roof. David Tennant's regen in Who. What other classic moments have been reacted to to death?
