Realistically what would his sentence be? He's a likable cop who shot the sadistic murderer that killed his wife. Hell, why couldn't they just say "John Doe came at him with a knife"?
He'd easily get off on a temporary insanity plea
He would not even do any jail time at all, but if he wants to stay a cop he would be stuck on desk duty for the rest of his life.

This is the only one that could have worked while still keeping to most of the movies themes, but ultimately it's still out of tone with what Fincher wanted.

This is a totally different movie but it sounds like an alright movie.
I agree Somerset shooting John Doe would have worked, you could even say something about compassion for your friend breaking the sins. However, it’s not as strong.
That one's the backstory told in media res as part of another movie where Sommerset is like 90 and it turns out Mills actually survived and became a serial killer because he blames Sommerset or something and then they have a fight in a house of mirrors and Kevin Spacey is there talking to both of them.

I think Sommerset knifing John Doe non-lethally would have been best. It still shows Mills struggling and nearly losing, proving Doe somewhat right, but now Doe has to face justice on human terms, which his being shot helps him avoid. Better ending with more balance.
