Fuck no. It STARTED good then completely botched all of the things people actually liked and became a comical dumpster fire. It has some damned good episodes and even a decent movie but overall it wound up being awful as a whole.
Yeah, season one really showed a lot of promise, but they didn't really expand on the stuff that made the show cool (i.e., the whole "magical girl/space opera" vibe). Instead they leaned really heavily into slice of life stuff, which wouldn't *necessarily* have been a bad thing if the townies weren't so one-note and boring to deal with. Then on the occasions where the show finally remembered it was supposed to be about magic space rocks fighting an evil empire, it just wound up being really half-baked and disappointing.
I think the show would've come out better if the townies had been integrated into the plot involving the Gems and monsters more often. Maybe capitalize on Steven being a hybrid and have him fuse with humans other than Connie. Of course that only solves one of the show's problems, but all the meandering around and pointless melodrama is a big part of why I dropped the show when I did.
I definitely have very fond memories of S1 and early S2, though. I remember the season one finale and beginning of season two had me extremely hyped for what the series would become, but then it just never really manifested.
If the Townes has to permanently evacuate the hub of invasions and we got occasional visits rather than "doughnut shop emplyee number 2 sings now" it would have been kino. Rewatching the Jailbreak Bomb was like rediscovering photos of a long dead pet. "Your mom did awful things, the gems are aliens, and I always felt like rose was trying to apologize for something! But now you're here, Rose looked out for her people now you need to do the same" is where the show peaked. I get that having someone for Steven to fight for is good but how many times did we need to see some radish paint gems?
The shows health hinges on Jasper. Legitimately cruel taunts are her first lines, and her second lines are miserable laments that she was a part of the first war, that she lost a lot and is still hurting. She was made by Rose specifically to fight Rose, transfered to being a personal bodyguard for PD's big sister. She had so many legitimately interesting perspectives she could have feed the show. Instead, she just falls into a hole for two seasons, rears her head twice, loredumps a TON of interesting things "My diamond, [Rose Quartz's] diamond! I failed Pink Diamond!"
And then next time we see her is the literal last scene of the show.

Those 1.5 seconds/36 frames encapsulated everything wrong with Steven Universe.

They could have intertwined the Jasper sub plot with Steven's PTSD plot and have them become co-dependent or something. Jasper needs someone to follow and Steven needs someone to fix - they both slowly come to realise this is unhealthy and eventually Steven realises he needs therapy and Jasper realises she needs to visit Little Homeworld so she can learn to stand on her own. There were many interesting plot threads dangled in front of us but instead they included a lot of silly stuff. Also Blue Diamond's solo song fucking sucked. Fuck you, Sugar.

To echo what several anons itt have said, S1 and S2 were great! S3 had promise, but by that point the cracks in Sugar's management style started to show. The lunatics started running the asylum and boarders replaced writers. From there it was a slow decent into Crying Dykes: The Show. It is a damn shame too, since the premise was solid and you absolutely could have gotten the original message across without 2.5 seasons of trash. Future was fine conceptually, but had to go along with the canon dumpster fire. SU remains in my heart in the same spot as other shows that wasted their own potential. I hold firm in my belief that Ian JQ leaving to do his own show caused things to go downhill.
