It’s not bad but people who like it out of nostalgia or a desire to fit in do it a disservice with these over the top panegyrics, because people can simply watch the movie and verify how wide they stray from the mark.
Its importance mostly lies in the imprimatur of legitimacy and artistic rigor it brought to anime at the time.

Most anime movies are childish and not particularly deep. Anime is a subsection of a subsection of a young artform, there's not actually that many which could be considered great art. The imagery in End of Evangelion alone puts it above 99% of other anime movies. Even though the themes could be considered childish they still resonate with many people due to the presentation and craftsmanship. End of Evangelion is primarily targeted at teenagers but it's arguably one of the greatest films targeted at teenagers there is.
One, the preconceived notions. As great, beautiful and important as the original Disney films were, they set a president for animation that still hasn't gone away. Most people (specifically the west) excepts, at best, a very good family film, and at worst, loud noises and funny silly things happening on the screen to get there kid to shut the frick up. Western animated films haven't been allowed too branch out to other demographics, or be anything more then safe. Any "adult" animated films that did come out were either shitty ralph bakshi movies, or clones of shitty ralp bakshi movies. If animated films were aloud to be as risky as live action films, I feel as if most people would respect the medium more.
Two, the people who makes the films. One big problem that I feel more people are realizing, is that the people behind animation although talented, are not very mature or really good writers. What animation desperately needs is actually good and competent writers who can make a good script. Cuz lets be honest, people who work in animation really think there mature and serious, but there not. If we real writers (adults who acted like adults) write for animated films, I feel like we would see a massive improvement. This is really an anime problem, because you see these anime directors and artists who think there super deep, yet they structure there shit like there teenagers. You have to admit at some point that people who make anime are weird nerds who are kind of lame and quite frankly, don't have much real life experiences (though this is definitely a bi product of Japanese culture, which is a whole other discussion.)

The final Rebuild film really feels like an imitation of EoE. It took as long as it did to finish because Anno knew he had to try to make a meaningful spectacle for a conclusion, but it didn't have the passion EoE did. You can look at any shot in Thrice and it's almost laughable if you're comparing it to what came before. It sucks, but Eva should have been left alone
