The only thing I remember about the show is that he went to a hotel with a dirtiness counter or something and said "if the count is 20 then this building is riddled with diseases" and the count ended up being like 500 so he pulled the fire alarm and ran. Was pretty funny
I'm saying, he isn't just a chef or celebrity. He has at the very least, considering I don't know if he's ever ran a hotel before, the book knowledge to offer these failing hotels, on top of his general running a business knowledge he's acquired over the past few decades.

As far as the other aspects of the hotel business it's really just super basic observations that even a drooling moron could make like "rooms should be clean". It's just that some owners are so incompetent they don't even see the most obvious errors they are making and they have to be told about them by an outsider.
