Just watched this. It was a very different movie than I thought it would be. The ending didn't make much sense to me. Did he let her go because she factory reset his brain by reducing him back to a burger flipper? Like he just forgot that he wanted her dead with everyone else?

She wasn't the intended guest (no solo diners), but a prostitute to fill in for the GF that ghosted the guy. The guest-victims are all well to do types, and she's lower class (like Ralph Feines). Feines' character's caught up servicing people with jaded tastes that eschew 'comfort food' (like a cheeseburger), and bent himself out of shape doing so to the point it compromised his artistic and personal integrity. Anya Taylmao Joy's character snaps him out of it, if just slightly. Director's done primarily mid comedies in the past and a bunch of television; you could say that this is his opinion of the state of 'arthouse' film making at the moment: awards baiting from people that aren't in their bones artists, hungry ghosts chasing clout.
So she did just flip a switch by reducing him back to his burger days. I noticed that after she gets the to go box she leaves a tip, but then he promptly reminds everyone that gratuity is included in the bill. It's like there is a glitch in his reasoning, and he forgets what he is doing during their brief interaction before he kills everyone.
It sounds like you are literally too stupid to understand the nuance in this film. That's really bad news for you, since there isn't that much nuance in this film.

So this was just the director trying something new but he has absolutely nothing of substance to actually say. Sounds like he should stick to his funny pictures.
Its basically the plot of ratatouille without the mouse and with the roles switched. Protagonist makes antagonist recall his happy moments.

She made him feel understood, y'know like when white women listen to taylor swift for the first time and some inner voice exclaims "THAT' S SO ME". It humanized Anya in his eyes, and consequentially sympathizing with her

The wacky "man is angry for some reason so he locks people in a room and most of them die" horror movie genre is so fricking played out.
It's better than the horror-trauma trend, where every movie is basically a variation on The Babadook.
I'm convinced that you have to be autistic to not get this movie or think any part of it doesn't make sense.

She was supposed to live, that was part of the "menu."
He gives her mutliple ways out of the situation, always in the direction that will benefit his cause, just so she won't frick it up.
The damn chef's house was even staged to mirror the restaurant with which she was familiar just so she wouldn't get disoriented, so she could find the radio and news clippings.
We can't even trust the chef saying "you're not supposed to be here" because the whole event's existence establishes him as a manipulative liar, plus the multiple contradicting stories which he tells.
The burger situation serves as an intended ultimate satisfaction for the chef, he gets to make what brings him happiness and also implies a "frick you" to the boorish clientele.
The only unknown factor is whether or not some elements of the menu were changed last minute to accommodate the different guest, or if it was intended for the ex-girlfriend and she was a suitable stand-in.
He didn't want her there and was looking for any reason to let her go that would satisfy the narrative of the evening, and she managed to find one.
The ending is the same as in Ratatouille but with reversed roles
After watching the critical drinker review of this movie, I kinda wanna watch it. That video was unironically hilarious

He didn’t really want to kill her like the rest of them but felt obligated to to complete the menu up till the burger order. As for why the burger was the tipping point I think it’s just cause he didn’t expect her to pay any attention to the photos in his room and it was a reminder of happier times as he was preparing to An Hero.
