honestly I assume it's kind of like how Johnny Bravo canonically does actually get chicks(after all he's canonically not a virgin) we just almost never see it happen onscreen because the 9/10 times he fails is where the most humor is(at least for a kid's show, hence why KOTH does the opposite with Boomhauer and we mostly see him succeeding), so in this case we usually only see Eustace be nasty onscreen because that's where most of his humor as a character comes from(particularly how his nastiness usually results in karmic harm and misfortune hitting him)
