I do agree that there should be more shows like Invincible, but in terms of the writing, characters, and episode length, not the art style.
This, the style can be done right, just look at classic Samurai Jack, but most just go for the most generic design, literally anime but with all the fun sucked out of it.

If I want something "gritty" and "dramatic" like the bottom I'll just watch it in live action. If I'm watching a cartoon it's because I want it to be bright, lighthearted, and fun

The bottom is fine provided the characters move and 90% of the time aren't just standing there not being animated. Not that the top is any better in this regard.

realistic anatomy is a just a cheap way of not making something cartoony and relying on rotoscoping which is much easier and less creative to do.
