I think what people mean is starting a diet thinking you'll do it for a while won't work, but more permanent lifestyle and healthy habit changes do. Switching to some gimmick diet won't work unless you're willing to stick to it. I'm sure there's people saying "diets don't work" as an excuse, not getting it. But there's an actual logic behind the sentiment.

Changing the soda to sugar-free version, only drinking sugar soda once a week and having a simple 45-minute walk 4 times a week would turn a lot of the morbidly obese into slightly overweight dudes. And thats by not touching the rest of their eating habits.
Sugar free is trading in sugar for poison
Only downside of aspartam is it rots your teeth even faster than sugar. Nothing regular teeth cleaning wont fix. Other than that sugar-free soda is one of those "sweets" that you can pretty much drink as much as you want without worrying about getting fat, because it really is just colored water with sweeteners in it. You can drink it in a gym.
