Don has had "awakenings" before this moment that went nowhere and he went back to being the same miserable alcoholic he always was. It all depends on if you believe Don could actually change by the end of the series.
Weiner was a writer on The Sopranos. Don is cut from the Tony Soprano mold of character. Tony's awakening (being shot by Junior) and inevitable capitulation on that change is written into the show. Don has an awakening by acknowledging that guy with the fridge dream and we see him happy by the end. Does it last? Does whether or not it lasts matter? I think that's what Weiner is asking with the ending, among other things.

The main character struggles the entire show and it ends with him being happy. Why wouldn't his happiness last? It seems like an obvious happy ending.

If Weiner says it's to be taken as a straight happy ending then I guess there's not room for debating that for you. I still think it's more open ended but we can agree to disagree.
I think the way they show the ad after Don's smile is acknowledging the obvious cynicism present in Don's change and you'd have to be kind of thick not to see it.

This is the moment where Don is lost the most , he quits NewYork et quits being Don Draper et quits McCann. But running away doesn’t solve his problems, he have a panick attack the day before this scene because he realise that he is still broken.
Yet there is a glimpse of hope during the retreat (that is a disaster at first). He realise he can connect with another man struggle and with his own battle. That he can face it. And this is the hippie bullshit that makes it possible for Don to open himself, to find this hope that seemed forever lost.
So Don makes the coke ad because he is deeply emotional, the ad is a medium for his creativity and it’s a way to express himself as silly as it sound. It shows that Don buys into the hippie philosophy and it’s him that understand that times have changed. It’s not 1960 the world is not the same and he can be someone else.
I don’t think we should read the ad at something cynic. The ad shows the hope that Don feels at this time and this hope is real. We just don’t know if this hope will translate in lasting happiness.
Anyway it is beautiful show, I hope you love it too.
