There's a reason many people have already dedicated several discussions to breaking down Zuko and Mai individually, and tearing their relationship apart: The way their "romance" is written does a tremendous disservice to the characters, but especially in regard to Zuko's otherwise immaculate arc. It's okay to critique weak writing in things you like, it helps content get better.

But speaking more seriously, Mai not sharing Zuko's sense of moral outrage against the fire nation is narratively necessary. She is the one thing in the fire nation that he enjoys, and the one person who loves Zuko as himself. Everything else in the fire nation is at best uncomfortable for him, and at worse actively upsetting.
When Zuko leaves the fire nation, he's leaving behind the one who loves him/he loves in order to uphold his moral principles. If Mai shared his moral clarity, or if they weren't in a relationship, than there wouldn't be any significance to his choice. As it is though, it demonstrates that Zuko isn't doing it for himself, he's doing it because it's the right thing to do.
Then, when Mai saves Zuko at the end of the boiling rock, it proves that she really does love him. Despite not sharing or understanding his moral stance, she acts selflessly in order to save him. This reinforces the importance of Zuko's choice, and demonstrates that Mai cares about Zuko as a person more than status or comfort. What's more, it demonstrates in microcosm how Zuko redeems the fire nation as a whole.

This is demonstrably false. Mai consistently dismisses Zuko's efforts to open up to her and later outright accuses him of treason at Boiling Rock, proving that she fundamentally does not understand him at all. If she accepted him for who he was, she wouldn't want him to put up a front as "the perfect prince" his father wants, nor would she be okay with dragging him back into his anger-infused melancholy, which he was already outgrowing by that point, but she's fine with all that so long as they get to suck face together.
Zuko is not naturally a downer like Mai, this is a common misconception because we see them encourage this in each other; the real Zuko is actually considerate of others, hopeful, wants to make the world a better place, and doesn't wallow in unhappiness—like he was as a boy. His natural characteristics were beaten to submission by his father's ruthless ideals. Angry, angsty Zuko isn't who he is originally, nor would he have turned out that way under normal circumstances. This is what people mean when they say he and Mai enable the worst in one another.
Their relationship seems like it's purposefully set up to fail, so Zuko could have everything he wanted in the Fire Nation and realize that it's vain. First of all, I would say that Mai hardly encourages Zuko's angst. She consistently tries to help him relax and not worry so much.

There's a reason many people have already dedicated several discussions to breaking down Zuko and Mai individually, and tearing their relationship apart: The way their "romance" is written does a tremendous disservice to the characters, but especially in regard to Zuko's otherwise immaculate arc. It's okay to critique weak writing in things you like, it helps content get better.

Yeah, because they're obsessive shippers who have the canon pairings living in their heads rent free.
But speaking more seriously, Mai not sharing Zuko's sense of moral outrage against the fire nation is narratively necessary. She is the one thing in the fire nation that he enjoys, and the one person who loves Zuko as himself. Everything else in the fire nation is at best uncomfortable for him, and at worse actively upsetting.
When Zuko leaves the fire nation, he's leaving behind the one who loves him/he loves in order to uphold his moral principles. If Mai shared his moral clarity, or if they weren't in a relationship, than there wouldn't be any significance to his choice. As it is though, it demonstrates that Zuko isn't doing it for himself, he's doing it because it's the right thing to do.
Then, when Mai saves Zuko at the end of the boiling rock, it proves that she really does love him. Despite not sharing or understanding his moral stance, she acts selflessly in order to save him. This reinforces the importance of Zuko's choice, and demonstrates that Mai cares about Zuko as a person more than status or comfort. What's more, it demonstrates in microcosm how Zuko redeems the fire nation as a whole.

This is demonstrably false. Mai consistently dismisses Zuko's efforts to open up to her and later outright accuses him of treason at Boiling Rock, proving that she fundamentally does not understand him at all. If she accepted him for who he was, she wouldn't want him to put up a front as "the perfect prince" his father wants, nor would she be okay with dragging him back into his anger-infused melancholy, which he was already outgrowing by that point, but she's fine with all that so long as they get to suck face together.
Zuko is not naturally a downer like Mai, this is a common misconception because we see them encourage this in each other; the real Zuko is actually considerate of others, hopeful, wants to make the world a better place, and doesn't wallow in unhappiness—like he was as a boy. His natural characteristics were beaten to submission by his father's ruthless ideals. Angry, angsty Zuko isn't who he is originally, nor would he have turned out that way under normal circumstances. This is what people mean when they say he and Mai enable the worst in one another.
Their relationship seems like it's purposefully set up to fail, so Zuko could have everything he wanted in the Fire Nation and realize that it's vain. Mai symbolically reinforces this since she embodies all the worst aspects of Fire Nation aristocracy and imperialism: Over-pampered, gets away with violence against innocents, utterly apathetic to others' plight, etc. It would've been better for Zuko's arc if he had stayed single at the end, and I think Mai should've been the one to join the Kyoshi Warriors to atone for her misdeeds—it could've been a good, natural progression for her character. This is why it feels like a total disconnect when the two still end up together in the finale.
Like it or not, romance is part of character development, and therefore deserves the same kind of care and scrutiny as any other form of character development.

First of all, I would say that Mai hardly encourages Zuko's angst. She consistently tries to help him relax and not worry so much.
Secondly, I'm not arguing that Mai and Zuko's relationship is perfect. I personally think they're very cute together, but that's just my opinion. What I'm arguing is that their relationship serves a narrative purpose, and doesn't detract from either of them as characters.

Here's the thing I've noticed about shippers, going all the way back to the old days of early internet, before lemons/limes/oranges and yaoi paddles, before ao3 and fanfiction.net when all you had to was usenet shit.
Shippers determine romance on how much the characters yell at each other. The definition of "these two have chemistry" is always of the volatile sort, where two buttholes constantly escalating and feeding off of each other is interpreted as "passion". That's why the largest and most popular ships are always the opposites attract, star crossed lovers that were literally trying to murder each other two episodes ago types.
When two characters can just sit in companionable silence with each other? That's totally lacking in drama, and "passion", and therefore chemistry.
Except while that drama makes for entertaining storytelling it's actually immature and toxic as frick in real life and the ideal is having someone you can just chill with without it being a constant struggle for dominance.
Do I think Mai is a great character with a lot of depth? Not really. But I do think that Zuko is a character that is almost constantly keyed up on some bullshit so someone that's going to match that energy is just going to result in explosions.

The problem with Jin and Song is that while what we see of their temperaments is such that they wouldn't just escalate to match Zuko's tempo, he met them while lying about who is was, and relationships built on such fundamental lies aren't any healthier than ones that are built on animosity.
