I had a KOTH dream last night.
It was the series finale. But there was an after credits scene with Joseph and Dale. They were working out together and getting fit. They got fit af.
At the end of the dream they went to visit John Redcorn in the hospital. He was dying of COVID. And Dale/Joseph just started happily posing as John slowly died.
I am not an artist but it made me laugh so hard I had to draw it before work this morning.
Assuming they keep their general physical development and personalities but nothing else?
Bobby achieves spiritual enlightenment much quicker and is even more of a pacifist to the point where he solves all his problems with diplomacy and running away. Bobby would've probably learned to control firebending earlier, since it doesn't seem in his character to dick around with forces that could injure his friends like that.
Aang being thinner and more energetic means Hank has a better outlet to feel proud about his son, though Aang's natural inclination to goof off would change the tone of the show.

Genetics do actual affect personality, people can be predisposed to have certain personality traits.

Well this is obviously pure speculation, but I'd reckon Bobby is more genetically inclined to be accepting of new things while Aang would be more genetically inclined to be responsible and athletic as well as to listen to his father.
I'd imagine Aang as Bobby would be more outgoing and athletic and share a bit more of the moralism Hank has.
While Bobby as Aang might learn Earthbending easier and might not be naturally gifted with Airbending.

The episode ends with Bobby rejecting his Avatar status and choosing to live a normal life in Arlen instead of going off to be trained by the monks in to becoming the spiritual leader of Buddhism. >tldr Bobby is the Avatar
Bobby can't emotionally handle what being an avatar entails. So basically the plotline would be almost identical.
Also, Aang would probably enjoy life in Texas, and Hank would be just as "that boy ain't right" as he was with Bobby.
They are very similar in personality, they just had different arcs. Not that bobby had that much of an arc.
