because steak cuts are generally more expensive and well done steak is essentially roast beef in consistency. Basically, if you're shelling out for a steak and you cook it until it's roast beef, you may as well just pay half as much for roast beef.

Personally I'm a medium rare guy, myself. What pisses me off is when people cut the fat off their steaks. That's where all the fricking flavor is, moron!

I kinda prefer roast beef tbh. I don't really get what the big deal about steak is. Beef is beef, just about any cut from the cow is going to taste good when it's done right.

If he's cooking some cheap grocery store steak to well done or he gets his steaks at Applebees then sure do whatever, but if he's ordering well done at a nice steakhouse or getting special cuts from his butcher and cooking those to well done then he deserves to be laughed at. Yes it's his money and he's free to spend it how he wants but it's a complete waste. It's like making a Jack and Coke, if you're using cheap whiskey it's fine if that's how you like it, but if you're using a nice 16 year aged scotch you're a moron. You're just throwing money away by consuming a high quality product in a way that destroys the things that make it high quality, when the way you prefer it would be just as easily satisfied with cheaper versions.

      >chefs can frick up steak and make it dangerous to eat unless it's cooked all the way through.
Steak doesn't have to be cooked all the way through to be safe to eat moron, unless you're eating absolutely shit-tier beef only the outside needs to be cooked to ensure that it's good to eat. Everything after that is preference, restaurants wouldn't legally be allowed to serve blue steaks if it was a real issue.

If you like well done steak that's fine, but that's not how steak works.

      >because chefs can frick up steak and make it dangerous to eat unless it's cooked all the way through

Where the frick have you been eating? For that fact, what have you been eating? Beef has no zoonotic parasites or pathogens, and can only make you sick if it's already spoiled, in which case it's not the beef, it's the establishment at fault. If you get sick from eating steak somewhere, you sure as frick better not try the chicken.

Then just buy your own steak and cook it man, unless your local market is importing its meat from southern Mexico or something all you have to do is cook the outside and it should be good. Beef can even be eaten completely raw if properly prepared, steak tartare is a dish composed of raw ground beef and spices and is a pretty common dish at nicer restaurants. Not that I'd recommend doing that with grocery store beef and especially pre-ground beef, but out of every meat you eat steak is genuinely probably the safest.

For a half inch steak cook for two minutes on each side for rare. Flip once.
              SUPER IMPORTANT:
After it's done cooking, set it on a plate off the heat. Do not cut, cover, or do anything with the steak other than let it set for at least 5 to 10 minutes.

tbh I made a steak up tonight and just played it by ear and it turned out a perfect medium-rare, I have no fricking clue how people don't know how to cook steaks. It just fricking looks and feels right.

Time and experience help a lot. Some cuts are also more forgiving than others.
Did you grill it or pan fry?

                Anonymous

Pan fry, I wish I could grill but I don't currently have access to one. I think the fact I was raised with a dad who fricking loved making steaks on the weekends helped, granted. I probably absorbed a lot of information without realizing it. He was a medium/medium-rare man.

                Anonymous

                Absolutely.
Do you have a porch or a stoop or something? The weber little smokeys are decently small sized. Otherwise there's parks that have grilling around. Of course I imagine in a particularly large metropolitan area that might not be possible either. Still, pan fry isn't an awful way to go. Do you usually use cast iron or not really?

It was all the more disappointing when I learned it wasn't always how they cooked. Folks had me late in life, and I was born around the time they were trying to deal with blood pressure, weight, etc.
Now that my mother is much older, she likes to recount how she would cook whole chickens, roast beef, steaks, bake bread, cakes, meatloaf's, casseroles, just about everything you'd imagine from when you think of those oldschool house wives with the big smile and apron, pulling out a roasted chicken from the oven. She cooked so much that my dad gained weight in the first months of their marriage. Fortunate for him since he worked manual labor, when he cut and ate less after his bros and cousins told him he was getting fat, according to my mom he got shredded.
