6 is the only one that is not great, it’s fine but only for fans of the show. Avoid the Covid seasons as a starting point since there’s no audience and the vibe is a bit different. I’d say look at the casts for 1-5 and 7-9 and see which has the most people you find funny in it and start there. If you feel that same about the casts and understand the premise of the show already I would start with Series 2 as the first episode has several classic moments in it. If none of the casts appeal to you more than the others and you don’t know the premise just start at the beginning.

Jeopardy's a quiz show that has been on for decades and each season contains hundreds of episodes. Picking a season at random is fine for a quiz fix and get a taste of that period's presentation, question difficultly and relevance to the decade, fashions, personality, etc. and you can always follow a contestant's progress.
Taskmaster is a comedy competition. It hasn't even been on ten years so very little has changed, and even the longest seasons can be watched in a day. Unless you there's comedian you love and want to see their season first, or absolutely can't stand one of the contestants and feel you have to skip their season, there's no reason not to just start with S01E01 and go through it all.
I would advise people who wanted to get into Jeopardy to watch the runs of some super champs first. Probably start them with Austin Rogers as he has the most personality then maybe move on to Arthur Chu as he’s the closest thing Jeopardy ever had to a villain except Mike Richards. Or maybe start them with one of the Tournament Of Champions, 2015 is my favorite with Alex Jacob strategically triggering the shit out of Matt Jackson’s aspergers in order to win.
Look at the season lineups and see which ones feature comedians you like. Failing that, just start from the beginning. Every season is practically the same, the first few were much simpler but the core is the same. Every season has at least one unlikable comedian in it as far as I remember.
6 and 8 are barely watchable, with Johnny Vegas being the sole savior of season 10. S10 is also the season where it feels like nobody aside from Richard Herring wants to be there.
Havent watched 13 and 14 yet because for they dont put them on youtube anymore and im too lazy to look up where i can stream them.

I feel like 7 is almost perfect for a newbie. equal parts insanity and genius on that season (also the funniest one imo)
