Most people are familiar with Christianity since it's pretty hard to avoid, so it's easiest for writers to stick with. Also, a lot of Christians, especially Catholics, don't even read the Bible, so it's pretty easy to make fun of them.
If any other religion was dominant in the US, it'd probably get ridiculed too.
There's definitely been a change in how Christians are overall depicted and viewed in the last 30+ years. There's no way you can deny it.
Because the west has become more secularized (good) and the church has less power (good) to dictate other people's speech (good). Also none of these American "anti-Christian" tv shows or movies come even close to what Luther wrote about the Pope

Your pic speaks for itself. Christianity was at a cultural zenith, the large majority of Americans identified as actively Christian and defended it. Large works (in Hollyisraelite of all places) were dedicated to Biblical stories. Christians weren't on the defensive at all, they were at the top.
Fast forward to now, active Christians are a minority and Christianity is endlessly parodied and criticized in media. They are well on their heels, and those movies reflect that.

Part of this is a branding problem. The band Switchfoot for example found early success branding themselves as a Christian band. Later they moved away from that to try and get radio play outside of Positive Encouraging K-LOVE, when that dried up however they returned to selling themselves as Christian. I think these horrible movies Protestants make sell themselves in this Christian market because they aren't good enough to compete elsewhere. Did you know that theaters hold special one night only events for showings of these flicks? There's money in it, it's just a limited niche that they've cornered. Most of said niche is made up of people who have very low media literacy.
That recent movie about the psychiatrist interviewing the demonically possessed inmate was pretty good. Can't remember what it was called.
