As Charmander, he was appreciative of the sympathetic side of Ash that took him in when he was abandoned. When he evolved into Charmeleon his dominant personality began to take over, and realized that Ash was kind of a shit trainer because he kept getting badges out of sympathy rather than actually winning them. It became even worse with Charizard because he realized Ash was beyond incompetent as a trainer. If Ash had actually earned his badges through battle prowess, Charizard would've had no reason to think Ash sucked and would've listened to him.

It's a symbiotic relationship. Pokemon like having someone take care of them and train them, and they genuinely enjoy battling, getting stronger, and evolving while humans get a cool sport out of it. If the pokemon wanted to leave, there's logically very little preventing them from doing so.

Pokemon just instinctively have a really strong desire to be subjected by a powerful master. Defeating them in battle and then furthermore capturing them is a way of confirming your power and skill and earning the pokemon's respect.

There are multiple examples in the show and games of pokemon refusing to obey orders. Pokeballs are a tool for containing them, but they still hold agency over themselves and any obedience is out of respect for a trainer who caught them.

There are malevolent Pokemon out there who are only kept in check because benevolent Pokemon are in the way. He was traumatized by his experience with his old trainer and got wienery while attributing his newfound strength to himself rather than Ash's skill as a trainer.
Ash didn't have skill as a trainer though. He's frequently beat in situations where he has a significant advantage. Even with the Magmar fight, he only listened to Ash because Charizard just didn't understand how to fight him and what Ash lacks in actual battling prowess he makes up for in creativity.

Charmander/Charizard are stand ins for the Viewer. He looks up to and likes him as a Charmander but when he grows older he realizes Ash is just a hollow puppet for marketing that steadily loses all the edges and character he had in the first seasons of the anime to just become a generic "good guy".
