These types of youtube editors generally work for multiple clients. And depending on the type of content the channel makes, it might not be that hard to edit. I imagine if all you're doing for Popcorn In Bed is scanning for reactions to the iconic scenes, as well as slowing down during jump scares, then you could get in a nice groove and edit pretty fast.
Most channels probably do it like you described and it feels that way but popcorninbed was different. Took 4 hour Ben Hur and fit it into a 30 minute video including all Cassie's commentary and didn't leave anything out. Not to suck the guy's dick but they really made it feel like you'd watched the whole movie.
