With the death of the Jedi only Obi-Wan and Yoda remained. So on the Dark Side you have two Sith and on the Light Side you have two Jedi.

None of that is a logical enough explanation as to why he would go from 10 (killing would-be prisoner Dooku and disarming Mace for attempting to kill a would-be prisoner) to 1000 (Killing literal children in droves) after a single moment. No matter how poorly he looked upon the jedi, it makes no sense for him to immediately be able to jump to that level of pure evil. It's not even political.
From Anakins point of view the Jedi have betrayed the republic by attempting to kill the chancellor. After mace is killed, the chancellor tells Anakin that when the Jedi hear about mace’s death, there will be a civil war between the senate and the Jedi. As such, they wipe out all the Jedi before they find out about mace because they’re traitors to the republic
From Anakin's point of view those children are also exactly like him. Kids who were abducted from their families and forced into a cult where they aren't allowed to have emotional attachments. That he's willing to kill them for a man he knows manipulated the frick out of him is absurd.

Yeah, the issue is the films did nothing to frame any of this correctly. Anyone with a functional brain should agree that the seeds of a good trilogy lie in Vader being a hotheaded, fatherless prodigy who is stifled by bureaucracy and is terrified of losing his wife, but the pacing is completely off. I don't even mind the acting or dialogue as much as others do, but so little time was actually spent on showing Anakin's relationship with himself and with others in any meaningful way. I don't hate the prequels (except AotC), but George does not work well without editors.

Most of this is complelty irrelevant. Anakin wanted to save Padme and thats pretty much it. The moment someone turns to the dark side all reason and logic goes out the window and the only thing that matters is becoming more powerful and that is pretty much all you need to justify Anakins actions.
The same thing happens in RotJ with Luke where all reason goes out the window because he wants to save Leia (pottery) and yet here we are with some morons still going
