      Because they think she's Turner's descendant and thus they need her to end the curse.
      They clearly state in the movie that "parley" is not actually "law" and they feel no particular obligation to honor any of their supposed "codes." If they found out she wasn't actually a Turner they would have done so: that's the implied threat.

        She was sheltered due to being an upper class girl so she thought murderous pirates would be civil and follow rules.

        this. that's the whole point of the scene: some naive girl thinks that outlaws are bound by romantic codes.

        That WOULD be the point of the scene, and it would indeed make sense, except we're shown that Barbossa actually seems to uphold most of his bargains, which makes the scene feel retroactively hollow.

        Elizabeth manages to save her own ass on accident later when she convinces Barbossa she's Bootstrap's daughter, but the only reason she's able to do that in the first place is because Ello and Poppet sincerely honor her request for parlay.

        Jack asks for parlay later that's also honored and I think every other time it's asked for in the next two movies it's respected. I think the intention is that it's a legitimate concept that pirates honor in that universe.
