I think one of 3 three things happened :
1. Genie never made him a prince, simply gave him everything he needed to appear as a prince
2. Jaffar was able to cancel Genie's magic once he became the world's most powerful sorcerer
3. Jaffar merely forced Aladdin back into his peasant clothes and revealed that Ali was a fake, and so Jasmine put two and two together that the Genie made him a prince. But Aladdin remains a prince at the end.

There are TONS of "Princes" in the Middle East.
In Ancient times if you rolled into town with a ton of swag and fanfare, who could possibly know you're not a prince from some far off domain? Are they going to check wikipedia and see your lineage was edited an hour ago?

I think what makes the most sense is that the Genie was bound to do whatever was needed to keep up the illusion. If the Sultan wanted to visit Ali's domain the Genie would have to conjure up subjects, a palace, etc.
The point is both the Genie and Aladdin agreed that this wasn't enough to make him a "real" prince, they just disagreed on what should be done about it. He was a magical prince, entirely dependant on the Genie's magic to sustain the charade.
There's a prevailing theory that because of his wish Aladdin's dad became the "King of theives." So technically speaking he is a prince, just you know, not a rich one. Genie just gave him a pimpmobile.

Music and Robin Williams is great though. Which are good enough reasons to rewatch it every once and awhile.
