There was like a single black man on the ship (plus his two mixed children, one of whom ended up being one of the last survivors to die), Joseph Laroche, and Cameron was such a nutter for accuracy in almost every way that I'm not surprised he was left out of the film, unless there was a single black extra during the sinking scenes to represent him (since there was no real focus on second class, which he, his wife and kids were from what I've read)
There was one Jap in 2nd class too who was almost denied deck access because the crew just assumed a minority was 3rd class
