OK, here is something I find weird.
The show starts with Fionna having a Sailor Moon parody dream with the Winter King (another version of Simon/Ice King) and she's clearly into this person. She meets the real Winter King and even kisses him before he dies. So this shows she does have an attraction to some form of Simon. When Ice King wrote Fionna and Cake, he had a crush on Fionna so is that attraction still there as Simon or no? Either way, I kind of ship it.
Hell no, why else would they include Ice Prince, or why would she kiss Winter King? I think it's less about the ice powers and more about the confidence that attracts her.
