DS9 is good. Voyager is.. well, it's Voyager for a reason, but watch at least once. There are some good episodes every season. The Year of Hell is great. A certain pair of Ferengi pop up again. Some of the Borg shit is alright. The end was decently pulled off which is saying something for Voyager. ENT is... it's easier to watch ENT if you think of it as part of the JJ universe

Sisko is eccentric, people need to get that in order to make sense of his performance. And it works, Sisko went through a traumatic event and is put in charge of a scrappy space station at the ass end of Federation space, his demeanor fits that. And then he becomes the holy man of bajoran religion and it's awkward for everyone involved. If anything bald wartime Sisko is kind of a downgrade. I'm willing to admit it's hit and miss with Sisko centric episodes but don't write him off just because he's different.
