Korean food is actually really good. Very flavorful and they found a way to eat lots of normally uninteresting root vegetables very interesting and packed with flavor.

All the restaurants just serve junk though it's always some novelty bullshit loaded with cheese that's instagram bait or it's some variation of fried chicken. I don't even know what traditional korean food is all the restaurants just seem to serve trendy food or "street vendor" food and they're run by actual asiatics too.
I recently attended a graduation ceremony where I got my A2 Korean certificate, and the ceremonial feast was made by 2 or 3 korean mom's that emigrated here from S. Korea.
Sure, there was shit like fried chicken to appeal to the masses, but the majority of the food was noodles with beef and lots of vegetables, three different types of kimchi, bibimbap (basically a make-your-own veggie bowl) and dishes that included the famous black bean paste - very delicious.
There was also, like I said, junk food (tteokbokki being the primary example, for some reason b***hes really love that shit) but even that junk food was crammed with veggies.
Personally I fricking love all of it. Ate almost four plates out of the massive buffet and felt very light and not overburdened by food.
Pic related is bibimbap, and I also tried this red sauce that they normally put in their bibimbap. The consistency threw me off a bit because it's a lot like honey/cough syrup so it takes a bit of getting used to (I think the reason is they thicken it with brown sugar)
