The whole point of the waterbending scroll episode was that she was just a normal waterbender who had to struggle to learn while Aang was a natural at it because he's the Avatar. But then in season 2 Katara is suddenly way better than Aang and is teaching him.
Katara literally broke a glacier apart in the first episode through sheer force of will. Aang is literally a prodigy and possibly the youngest airbending prodigy in history.
As for why Katara is better than him at the start of S2, it’s implied in the first episode that he goofed off while training under Pakku. And personally I think that makes sense considering Master Gyatso made training “fun” for Aang when teaching him airbending.

The Water Tribes are both patriarchal, but the war with the Fire Nation meant that all the capable men in the village were off fighting. Sokka retained his patriarchal views at first because he desperately wanted to be one of "The Men" like his father, and not the child that he still was when he got left behind. But because all the women were left to run the southern tribe in the men's absence, Katara would naturally come to believe it's natural for women to lead when needed and that they're just as capable as men. Her feminist views didn't come from nowhere, and she only stood out compared to other members of the Water Tribe.

Most cartoons in america from the 80's to the 10's had overt societal brainwashing in them because of a mandate during the Reagan administration to stop cartoons being about selling toys.
The mandate was that shows had to have a certain percentage of it's content teach of moral, social or politically conscious message in order for it to receive massive tax breaks to offset production costs.
This is why so many of the shows you saw as a kid had overt anti-bullying, pro-environment, anti-sexism messaging hamfisted into these shows as "educational entertainment."
I'm going to play devil's advocate and speculate here, and say that Bryan Konietzko and Michael Dante DiMartino did not personally insist that Sokka be made a misogynist caricature, it was a business decision to hit moral messaging quota's to count as "educational entertainment."
This is one of the big reasons why there was such a disconnect between the first season of the Clone Wars and the next season, season one was trying hard to maintain itself as educational with it's focus on moral lessons in order to get those tax breaks even though the entire point of the show was to sell merch, which is why they just decided to go with the later format.

Snow reflects the sun and tans you, if it's snowy and sunny for a good amount of time.
That's also why you should put on sunscreen if you're on a ski-vacation since you can get sunburned.

The whole point of the waterbending scroll episode was that she was just a normal waterbender who had to struggle to learn while Aang was a natural at it because he's the Avatar. But then in season 2 Katara is suddenly way better than Aang and is teaching him.

As for why Katara is better than him at the start of S2, it’s implied in the first episode that he goofed off while training under Pakku. And personally I think that makes sense considering Master Gyatso made training “fun” for Aang when teaching him airbending.

The Water Tribes are both patriarchal, but the war with the Fire Nation meant that all the capable men in the village were off fighting. But because all the women were left to run the southern tribe in the men's absence, Katara would naturally come to believe it's natural for women to lead when needed and that they're just as capable as men. Her feminist views didn't come from nowhere, and she only stood out compared to other members of the Water Tribe.

This show is going to be katara being a rey character, the main character, and aang and sokka being watered down side characters that have certain scenes that the writers put it to try and trick the viewers into thinking they're still the same characters while do everything they can to change that

I'm going to reveal something to you all that most of you don't know.
Most cartoons in america from the 80's to the 10's had overt societal brainwashing in them because of a mandate during the Reagan administration to stop cartoons being about selling toys.
The mandate was that shows had to have a certain percentage of it's content teach of moral, social or politically conscious message in order for it to receive massive tax breaks to offset production costs.
This is why so many of the shows you saw as a kid had overt anti-bullying, pro-environment, anti-sexism messaging hamfisted into these shows as "educational entertainment."
I'm going to play devil's advocate and speculate here, and say that Bryan Konietzko and Michael Dante DiMartino did not personally insist that Sokka be made a misogynist caricature, it was a business decision to hit moral messaging quota's to count as "educational entertainment."
This is one of the big reasons why there was such a disconnect between the first season of the Clone Wars and the next season, season one was trying hard to maintain itself as educational with it's focus on moral lessons in order to get those tax breaks even though the entire point of the show was to sell merch, which is why they just decided to go with the later format.
Reevaluate most of your childhood shows based on this info.
