Read it first, since it’s less time consuming to binge. The art in Baki is detailed and unique as well, the animation can look a bit stiff in the 90s and s1 of the Netflix anime
I enjoy the anime as a one-time way to relive the story, but it's pretty low budget. A big part of the manga's appeal is the grotesque art and the anime is a huge downgrade without offering much for it.
If you read the manga, keep in mind there some shittily translated sections even blatantly made up. If you watch the anime, keep in mind the one on Netflix starts from the second series and you should watch Grappler Baki (2001) first.

However the first two seasons are old like from the ‘90s and season 3+ was made in like 2020 by a new studio. All kino though but you gotta start with the real S1.
