The problem is that the average, historically illiterate viewer won't think that the magic whips, magic fireballs, and vampires were real. They will however see the depiction of the church and assume that it is based on historical fact. It's a much more plausible twisting of the truth.

My main issue is that 99% of the show is showing how hopelessly outmatched the humans are and then things turn around and the monsters are defeated because the script says so

This doesn't bother me at all and neither do the specific character differences, but in general I don't understand why they're pivoting away from the classic horror influences instead of leaning into them. If you're going to adapt something that was always a paper thin play on classic horror monster movies why not play into that? There's nothing special about Castlevania's story, so you'd think any adaptation would be an excuse to play with these influences. That's what I would have done.

i do not know what i expected after first one.
I'm on episode 2 and it feels so incredibly rushed. It's like they want the cool moments of the original Castlevania but can't be bothered with any of the build up, so you end up with an emotional scene for a dead bird instead of the character that dies that very episode (whom we also knew nothing about). The black vampiress with 21st century dominatrix platform heels also takes me out of the Revolutionist France period.
It's like they're missing the point of what made the earlier seasons so kino.

If you're going to adapt something that was always a paper thin play on classic horror monster movies why not play into that? Why is Richter siding with the revolution? Isn't he a nobleman? This isn't even a game lore vs show lore thing, I'm pretty sure House Belmont was a thing in the earlier seasons. I know the Belmonts weren't in good standing at the start of the series, but you'd think after defeating Dracula and saving the world from a demon apocalypse they would have gotten their good name back.
I've never been a big castlevania player, so the story didn't bother me. I enjoyed the first series, but I thought the Japanese twin plotline was stupid. I get that the writers needed to demoralize Alucard in some way, along with the other characters, but having them betray Alucard because they thought he was "hiding something" was just stupid.
