We know nothing about Gotouge's gender officially, the assumption is Gotouge is a woman because it's common for female Jump authors to hide their identity while their series is running.

AOT benefitted from the anime basically re-pacing the manga into something engaging. The manga is dogshit, and the anime falls apart quickly because its source material was never good to start with.
