Jack is a natural swordie. Just because he’s trained in ninjutsu doesn’t mean that he isn’t a constant sword master. I’m willing to give you Shredder because he’s mostly more ninja than swordsman. My point is, it doesn’t make sense to count swordsman wins also as swordsman loses in order to say that there’s a bias against swordsmen.

Jack and Shredder could also be considered ninjas and Shredder is more of an arm blade user than a specific sword/katana wielder, Cloud & Link are both swordsmen and both lost to each other at some point in DB history respectively, and Vergil usually relies on his sword moreso a lot and comes off as more of a samurai/ronin type figure anyway compared to Sephiroth who's more of a soldier/knight.

Also tbf gojo is up against Makima who's a redhead and Daredevil, Jean, Barbara Gordon, Ichigo, Gaara, and Akuma all lost. So Gojokima actually could be another "Loser's bracket character vs Loser's bracket character" match if that makes any sense at all. Similarly to how I mentioned they keep killing off specifically swordsmen in particular.
