Asgardians don't heal the way Zamasu did either (and neither does Gorr himself). Thor lost his eye an arm in the Reigning and in the main continuity and it took more than time to grow them back. But the stat disparity is so gargantuan Zamasu has no chance to do anything. Gorr at his peak was a living necroverse and much stronger than Skyfather Thor, while you have to pick and choose with Zamasu. Over in the anime attacks considerably stronger than Zamasu himself were enough to put him down, and that's the one with Zamasu becoming a timeline. Over in the manga is where his regen truly shines, but again weaker version without the timeline fusion

Oh and to answer your question, and to give Anderson a more fitting MU: I rarely see any good matchups for the Dragon Quest series. Most of them either don’t make sense, or are all just Luminary focused. It’s a shame because a lot of the other MCs and villains do potentially have nice fights.
Also Anderson has Johnathan Joestar (obvious), Aki (slayers turned into abhorrent monsters), and Jonathan Reid, if you want Anderson to feel conflicted about fighting a vamp who’s actively trying to save a town from shitty mega religious murderers, illness, and other vampires.
Yeah Dragon Quest is pretty hard to come up with a MU for because of just how the series is structure.
