I always assumed that "sorry I couldn't resist" was the writer talking to the audience. It's a plot contrivance. But no more contrived than coming up with the whole elaborate plan of pretending to want to buy mandingo fighters instead of just having the white German guy go directly to the slave owner and say "hey I hear you have a slave who speaks German, I'd like to buy her, name your price" because "well what if he says no deal". that's mentioned, but there's a scene where they go to the slave registry to figure out who owns his wife. When they discover it's Candie, Django asks "so we offer to buy?" and Schultz says if you ask to buy a horse from a farmer but the farmer says no, then steal it, you're a horse thief and you'll be hanged. His point being that they can't take the risk that Candie will just refuse to sell. Besides, if they make him a fabulous offer for the slave of course he'd pay attention to it.

Did Shultz actually have access to the amounts needed to buy her? I can't remember what sums he deals in. It seems like the plan is necessary because a. Django must be with Shultz to recognize Broomhilde and they can't raise any suspicion that he is an escaped slave (looking to free a slave would do this) or Candie will refuse on principle, and b. Shultz doesn't have bottomless pockets and is willing to help Django but not give up his entire net worth for it.
