I do think she should have gone into hiding and lived for like 6-7 more years with Leia, before passing away from something or other. But no one would be satisfied by that. For them it has to happen on screen in some dramatic, epic way during one of the big movies.
They need the disney+ series surrounding those years so they can cry about how Senator Flavius Zxilla is now a Chinese girl instead of a white woman like she was standing in the background of one of the prequel movies.

The galaxy used to feel enormous. So that things like that could be overlooked because who is going to keep up with tens of thousands of planets affairs and populations? No one would be any wiser about a princess of Alderaan's mom if the royal family didn't make a fuss and she blended in. But now it's been downsized to like fifty planets and most stories on Tatooine, so most plots are unbelievable.

That was actually how Lucas envisioned it back in the 80s during ROTJ. I don't know exactly the reason why he changed it to what we got.
