Death could easily rip Puss to shreds if need be. But he saw that Puss learned something and actually valued his final life that he spared him. Puss literally said that he can’t defeat Death, but he won’t stop fighting him away for the sake of his own life.
If Shrek values his life, then that would deter Death like how Puss valuing his life made Death spare him. But there’s no way Shrek could defeat the lobo.
