The point is that he couldn't see his blue hands (not his entire arm covered in armor) because of shitty lightning and meh cgi and thought the knife flip thing was unnecessary. Just a simple mistake, chillout.

This was actually a surprise and a tense moment. They still fricked up by not giving him a fight with Jon where he beats him (or kills him if they had the balls) and then keeps going to this scene.
Night King killing jon would have been great. You get your dumb fight, expect him to win, he does. Got resurrected just to fail. Much better than what we got
