But droids aren't expensive in-universe considering the characters we see acquiring them are usually poor, including whole factions. And at that point why not just steal and reprogram a Droid instead of capturing a guy who will not be compliant, can get sick, and needs food to work?

Droids seem to be more specialized, rather than generalized. You build them for a thing or task but they aren't good at anything else. Also the maintenance might be a b***h long term, whereas slaves heal on their own. Food rich, tech/resource poor societies might favor slaves and vice versa.

Luke buys his droids second-hand from a bunch of desert scavengers. We see one of the droids in the Jawa market blowing a fuse and breaking down. When Luke takes his droids home, he immediately starts doing his own repairs, knowing that they are probably in shitty condition. He's not buying premium, prebuilt, Alienware droids here.
The rebels have droids but we can assume that most of these are stolen. They're a breakaway faction from the Republic, and they took whatever they could with them. Rebel droids, like everything else the rebels own, look old worn.

I imagine some races would be better as slaves than humans too. We hardly got a glimpse into the broader picture of the galaxy, I'm sure there is some kind of creature that is nearly as smart as a human and reproduces more quickly, making them cheap.
